My NEW Cucumber Cottage Cheese Salad

May 2004. In modifying my meal plan for the hotter weather, I was looking for something to do with cucumbers which are cool and refreshing, while adding something to them that might satisfy my intense hunger for a while. Here's what I came up with. It's very tasty, creamy, sweet and cool. You're sure to love it!

Cucumber Cottage Cheese Salad

5-6 medium-large cucumbers, peeled and diced
24 oz low-fat cottage cheese
1/4 cup diced red onion
5 packets of Splenda
2T white wine vinegar
1T dried dill
1T dried basil
salt to taste

Mix everything together and split into 6 cup-sized tupperware. Each serving is ~ 85 calories. Enjoy!
